That’s awesome. We’ve done them in an electric skillet as well.
What we found our last trip was the Bis-quick pancake mix in the plastic jug worked really well and was good. Its twice as expensive but convenient. Comes in a plastic pour jug with powder already in it, and you add water. Makes about 12 big pancakes for $3, which is twice the price of mix in a box, but this is a disposable plastic jug with a cap and the powder is in it, just add water. Once its used up , you toss the jug.
